HAND-MADE PICI ALLA SENESE WITH DUCK RAGU'
for 4 persons
Ingredients for the pasta
500 gr flour
150 cl water
2 eggs
Ingredients for the ragù
200 gr duck breast
1 celery
1 onion
1 carrot
4 tomatoes
garlic
thyme
San Felice Olio Extra Vergine d’Oliva
salt and pepper
Procedure
Knead the flour, water, and eggs to obtain a smooth dough, let rest 30 minutes, covered.
Cut the sheet in strip 2 cm wide, hand-roll them to resemble spaghetti, but thicker.
Cut the vegetables into cubes and cook in a saucepan with the olive oil, garlic, thyme, and tomatoes. Heat the duck breast in a pan with olive oil, salt and pepper, put in the saucepan with the vegetables, add olive oil, let cook covered at 90oC for 8 hours.
When cooked, cut up the breasts and add them to the cooking liquid and the vegetables. Salt and pepper to taste.
Cook the pici in boiling water, drain when al dente and garnish with the duck ragú.
