LAMB SCOTTADITO WITH THYME, PORCINI MUSHROOMS, AND SWEET GARLIC SAUCE
for 4 persons
Ingredients
2 racks of lamb
300 gr porcini mushrooms
garlic
thyme
San Felice Olio Extra Vergine d’Oliva
salt and pepper
2 dl lamb stock
Procedure
Clean the lamb and cut it into chops, let them absorb the thyme for a few hours.
Slice the porcini mushrooms, sauté in oil and the whole garlic.
For the garlic sauce, blanch the garlic cloves in water three times, then blend them.
Cook the lamb in a frypan with the olive oil, thyme, salt and pepper.
Arrange the mushroom slices in the centre of the dish, arrange the chops and sauce them with the lamb stock, then garnish with the garlic sauce and add fresh thyme.
